Agave Karwinskii

has many varietals and sub-varietals including: Barril, Madrecuixe, Cuixe, Bicuixe, Tabasiche, Tripon, Largo and more based on regionality. The piña grows upright on top of short stalk of denser piña composition. Both the piña and stalk may be harvested, roasted, and fermented together resulting in mezcals that are dry and tannic.

Sotol

Sotol is a distilled spirit made from the Dasylirion, Asparagaceae. There are multiple varitals of this plant used in spirits production. Endemic to northern Mexico, New Mexico, Arizona and Texas. Sotol has a Mexican DO in Chihuahua, Durango and Coahuila.

Tequila

Agave Tequilana Weber | variation Azul

legally is the only species of agave that can be used to produce Tequila from within the Denomination of Origin (DO). The DO includes Jalisco, Nayarit, Michoacan, Tamaulipas, Guanajuanto. Blanco Tequilas are unaged. Reposados are aged between two months and a year. Añejo tequilas are aged between one and three years, and Extra Añejos are aged for longer than three years.
